Ingredients
1 cup E-Z-Bake Corn Meal
4 tsp. baking powder
1 tsp. salt
4 tbsp. sugar
1 cup Enriched E-Z-Bake Flour
4 tbsp. melted shortening
1 1/2 cup milk
1 egg
Directions
Sift all dry ingredients together. Add melted shortening. Combine milk and beaten egg and stir into first mixture just enough to dampen ingredients. Fill greased muffin pans 2/3 full and bake in hot oven (400° F) about 25 min. Makes 12.
